A few small changes to how you display bean dishes at the
station can make them the obvious choice
Serving Strategies
Beans By Default
For dishes that offer a choice between beans and animal protein, make beans the default at your station. Keep animal proteins available as an add-on or swap, note it on signage, but don't display the protein itself.
In both staffed or self-serve station settings, the bean entrée should be the default and the only visible option at the station. Small signage in the service line lets diners know they can request an animal protein swap from serving staff.
Keep in mind:
- Do this at stations with staff to answer questions and make swaps
- Do this at stations with choice built in—think deli, grill, bowl, and other “build-your-owns”
Placement Tactics
Prime Placement
Position bean dishes in the most visible spots, and use lighting, garnishes, and signage to help them stand out.
Place bean options first in line, with animal proteins positioned a few spots away so they don't compete for attention.
Visual Promotion
Featured Dish
Promote your bean entrée with posters, signage, and dish labels, social media, and if feasible, display a sample plate to spark interest.
This is a chance to celebrate existing favorites so more guests (even meat eaters!) take notice and to test new bean dishes.
